More or less moussaka

It’s been a while since I’ve had moussaka and I don’t recall it containing potato but the recipe I had seemed to call for it and the entire thing turned out rather well.

I’m not sure I had a reasonable amount of lamb mince either but it seemed to work well enough in the pan, though perhaps I could have cut the potatoes into smaller pieces.


The recipe also called for parmesan which I didn’t have so I added some sort of smoked cheese with paprika to the egg, cheese and Greek yogurt mix. I called for garlic and herbs too which I entirely forgot not that it made all that much difference.

One handy recommendation the recipe suggested was microwaveing the aubergine before frying it to reduce the amount of oil it would soak up while frying, but it did recommend 3 to 5 minutes in the microwave which seemed a little much so I reduced it to 2. And though I did prick the thing all over with a fork before I put it in the microwave I was still expecting it to explode.


The final disk then went under the grill till it gained a reasonable colour in its rather poorly sized pan and while a slightly smaller pan or more aubergine might have allowed me to create a more regular sort of upper later the entire dish didn’t suffer much for a lack of it.
